Allspice is one of the few spices native to the Western hemisphere. Jamaica and Mexico are the largest suppliers of allspice to the world. We select the Jamaican for its potency and consistency. Allspice received its name because its flavor is like a combination of cinnamon, cloves and nutmeg. The allspice berry is the size of a large peppercorn and can be ground in a special peppercorn/spice grinder or a mortar and pestle. It's culinary uses range from pickling or general canning to flavoring delicate baked goods. Caribbean cuisine includes allspice in jerk seasonings, soups and stews.
