BBQ & A: Smoked Fish
Learn the basics of smoking fish.  We will discuss hot and cold smoking techniques, brining and curing.  We’ll talk about how to use different smoking woods to add flavor to your fish, as well as how to use both charcoal and gas grills to get great results. Then we will sample some candied salmon as well as a pastrami salmon.

Join the Kitchen Window Grillmasters to learn the ins and outs of do-it-yourself sausage making. You’ll learn everything you need to know to get started.  We will cover grinding methods, seasoning, casings, stuffing and of course grilling.  We will make and sample a classic Bierwurst served the traditional way.

You’ll learn how to select the best quality ribs for cooking on the grill. You’ll learn to master slow-cooking methods that give you ultimate tenderness and flavor. We’ll discuss rib prep, seasoning, mops and sauces.  You’ll come away with tips, techniques and some mouth-watering samples!
