Kitchen Window's Thai Chicken Curry
Ingredients
3 each Red bell peppers, medium dice
3 cloves Garlic, minced
2 each Yellow onion, medium dice
1⁄2 pound Snap peas
2 lbs. Diced chicken
1 pkg. CurrySimple™ curry sauce
4-6 C Cooked basmati rice
1 bunch Thai basil
Method:
1. Sauté peppers, garlic and onions until soft and slightly caramelized
2. Add the chicken and cook through
3. Add the snap peas and cooked rice and the contents of the CurrySimple™ curry sauce package and cook until the peas become tender.
4. Fold in the basil and serve.
