Grilled Lemon Chicken
Ingredients
4 chicken breasts
1/3 cup fresh lemon juice
2 tablespoons lemon zest
2 garlic cloves, pressed
2/3 cup olive oil
salt and pepper to taste
Method
1. In a bowl, whisk together lemon juice, zest, and garlic
2. Slowly whisk in olive oil
3. Add chicken breast, marinade up to 1 hour.
4. Pre-heat grill on high heat
5. Remove chicken from marinade, and place on a plate to allow excess oil to drain off.
5. Sear chicken on high until grill marks appear. About 4 minutes per side. Chicken should release from the grate when it is ready to turn.
6. Reduce heat to medium or move to cooler part of grill.
7. Allow chicken to finish cooking. Grill until the internal temperature of the thickest part of the breast reaches 160-165 degrees*. This is your preliminary temperature, not the finished temperature. Remove chicken to a platter and allow to rest about 10 minutes. During this time, the food will continue to cook and the temperature will continue to rise. This also allows the juices in the meats to redistribute. According to USDA guidelines, your finished temperature should at least 165 degrees.
For a fresh summer taste, serve with diced tomatoes and avocados, tossed with cumin, salt and lime juice.
