Kitchen Window's Grilled Halibut with Chermoula
Grilled Halibut Ingredients
4 6 oz Halibut Fillets
2 heads Frisee or other bitter green
1/2-1 cup Chermoula (see below)
Method
1. Preheat grill on high heat for 10 minutes
2. Prepare frisee by removing the core and tearing into bit size pieces. Rinse and dry thoroughly.
3. Sear halibut fillets on high heat, turn and sear other side
4. Once golden brown, move to an area of lower heat and rest till cooked through.
5. Dress greens with chermoula and divide onto dinner plates.
6. Top with grilled halibut fillets and drizzle fillet with 1 teaspoon of chermoula.
Chermoula Ingredients
3 tablespoons lemon juice
1⁄2 teaspoon cayenne pepper
1 tablespoon pimenton (smoked paprika)
2 teaspoons cumin
1 teaspoon saffron
1/2 teaspoon corriander
3 cloves crushed garlic
1 cup olive oil
2 tablespoons chopped parsley
2 tablespoons chopped cilantro
salt and pepper to taste
Method
1. Combine the spices, lemon juice and garlic in a small mixing bowl.
2. Whisk in the oil and season to taste with salt and pepper.
Serves 4
