Kitchen Window's Caribbean Burger with Chipotle Mayo

Caribbean BurgerIngredients: Caribbean Marinade
2 cloves garlic peeled and pressed
1 ½ teaspoons orange juice
Zest of one orange
1 ½ teaspoons freshly chopped thyme
1 medium jalapeno chilies, seeded, finely chopped
2 tablespoons brown sugar
¼ cup soy sauce
½ teaspoon ground allspice
2 tablespoons canola oil
1 bunch green onions, thinly sliced

Ingredients: Caribbean Burger
1 pound ground beef chuck or round
1 teaspoon smoked black pepper, to taste
½ teaspoon salt, to taste
Fresh pineapple ¼” slice, grilled
onion & tomato slices to taste
lettuce to taste
Chipotle Mayonnaise

Ingredients: Chipotle Mayonnaise
½ cup mayonnaise
1 ½ teaspoons minced canned chipotle chilies in adobo

Method
1. In a non-reactive bowl, combine all ingredients for marinade with and whisk together. Season with salt and pepper.
2. Place into a non-reactive marinating dish. Set aside.
3. Place ground beef in a large bowl
4. Season with salt & pepper
5. Form into firm 8-ounce patties
6. Lay the patties into marinade and let sit for 10-20 minutes, flipping once half way through.
7. While patties marinate, prepare mayonnaise according to recipe below.
8. Once the patties are marinated and just before grilling, sprinkle them with salt and pepper.
9. Grill over direct heat, brushing each side once with marinade, till caramelized or seared on both sides.
10. Rest in cooler area of grill till cooked to desired doneness.
11. Serve with mayonnaise, grilled pineapple, onion slices, tomato slices, and lettuce.

Method: Mayonnaise
Combine and refrigerate for later use.
