Asian Lettuce Wraps
Ingredients
2 lbs pork loin, diced or 6 chicken breasts
1 large onion, finely diced
8 oz shitaki mushrooms, finely diced
5 cloves garlic, pressed
1 Tablespoon ginger root, finely grated
2 tablespoons olive oil
1/2 cup water
2 tablespoons chili sauce
4 tablespoons soy sauce, to taste
2 tablespoons sesame oil
1 bunch green onions, chopped
3 tablespoons cilantro, chopped
salt and pepper to taste
2 heads bibb lettuce
1 bag bean sprouts
1 bunch green onions, chopped
1 cup carrots, julienned
1 cup red pepper, julienned
1 cup dry roasted peaunts, chopped
hoisin sauce
Method
1. In a food processor, finely dice onions and remove. Finely dice mushrooms and remove. Finely mince pork or chicken and remove.
2. In a frypan or wok over high heat, add olive oil, onion, garlic and ginger. Sauté until onions are softened.
3. Add minced pork or chicken and sauté until cooked.
4. Add mushrooms and sauté about 2-3 minutes.
5. Add water, chili sauce, soy sauce, sesame oil and green onions.
6. Add salt and pepper to taste
7. Cook until most liquid has evaporated.
8. Stir in cilantro.
9. Serve in lettuce leaves with bean sprouts, carrots, red pepper, peanuts, green onions. Use a small amount of hoisin sauce spread on the lettuce leaf.
