Mangi! Mangi!
Americans are so fond of Italian cuisine that pasta, olive oil and balsamic vinegar have become staples in our kitchens. Although many of us grew up with the very Americanized versions of pizza, lasagna and spaghetti and meatballs, the general trend over the last decade has been to discover the more finely flavored, authentic cuisine of Italy.

In this issue we have primarily revisited the basics with explanations on how to make them both better and faster. To find out how to make creamy and delicious risotto in a matter of minutes, see Anita Teigen’s article What Would Your Italian Grandmother Say? And, to roll out the kinks in your pasta making skills, learn from our resident pasta making expert, Carl Antholz, in his article Perfect Pasta.

Exploring the cuisines of the world has become an integral part of how we at Kitchen Window fuel our passion for food. We hope that you enjoy these journeys as much as we do.

Next month: Comfort food and the ins and outs of turducken.

Still not sure? Several years ago, Mary Leonard, wanted to learn to make truffles. She signed up for Kitchen Window’s Truffle Class and loved working with chocolate. In fact, she loved it so much, Mary launched her own chocolate business—Chocolat Celeste. Mary is considered to be one of the nation’s top chocolatiers. We were so impressed with Mary’s line, we now sell it. Stop in and try one of her amazing creations, or sign up for a cooking class and who knows what you’ll be doing in the future.
