White Bean Salad with Tuna
From: Cool Food

Ingredients:
14 ounce can of cooked cannelloni beans
3/4 pound green beans, trimmed
2 baby fennel bulbs, thinly sliced
1/2 small red onion, very thinly sliced
1 cup parsley leaves, roughly chopped
1 tablespoon olive oil
2 fresh tuna fillets (about 12 ounces)
1/3 cup lemon juice
1 garlic clove extra, finely chopped
1 red chili, seeds removed, finely chopped
1 teaspoon sugar
1 tablespoon lemon zest
1/2 cup extra-virgin olive oil

Method:
Cook the green beans in boiling water for 1-2 minutes or until tender, and rinse under cold water. Mix with the fennel, onion, and parsley.

Heat the oil in a heavy-bottomed frying pan and cook the tuna fillets over high heat for 2 minutes on each side or until still pink in the center. Remove, cool for 2-3 minutes, then cut into 1-1/4 inch chunks. Add to the green bean mixture with the cannelloni beans and toss to combine.

Combine the lemon juice, garlic, chili, sugar, and lemon zest. Whisk in the olive oil and season with salt and pepper. Toss gently through the salad.

Serves 4-6

In August, everything slows down under the weight of 80% humidity and 90 degree heat. Why not try whipping up delicious meals using fresh, local ingredients that won’t weigh you down? Cool Food will provide you with enough easy, refreshing recipes to last you well through the end of the summer. Your family and your wallet will thank you.

Cool Food is one book in a collection of cookbooks by Laurel Glen Publishers. It features “200 easy and refreshing recipes for lazy days,” complete with full-page, color photos of each dish. And when they say “lazy day” recipes, they mean it. No recipe is longer than one page. The book is divided into starters, main courses, side dishes, sweets, and drinks. An example menu including all of these might be:

• Chilled Almond Soup
• White Bean Salad with Tuna
• Watercress, Feta and Watermelon Salad
• White Chocolate Mousse
• Earl Grey Summer Tea

Cool and delicious, no? These recipes are most definitely ones you would be happy to create during the summer. They are easy to follow and not too complicated or time consuming. Most of the ingredients are of the high-energy, low-fat variety perfect for a warm weather lifestyle.

However, this book is comprised of recipes only. There is no background, elaboration or explanation of any recipe, simply recipes accompanied by a stunning color photo. If you are the type who loves to read cookbooks like novels, this isn’t the book for you. Although, it never hurts to have a go-to, no-nonsense recipe collection, especially when it’s so hot you can barely think straight.

I made the white bean salad mentioned above and found it, as promised, ideal for a “lazy day”. If you want to simplify the recipe even further, and cut down on dirty dishes, substitute canned, flaked tuna for the fresh filets. It won’t be exactly the same, but it will save you some time and energy.
